My Spicy Roast Butternut Soup

I don't like winter very much but if I had to choose one positive thing about winter, it would have to be the food. Winter foods are rich and hot and feel like a hug from an old friend. One of my favourite winter recipes has to be my Spicy Roast Butternut Soup. It's easy to make and supper delicious, so please give it a try.


Spicy Roast Butternut Soup

Ingredients

1 large butternut (cut into chunks)

Olive Oil

2 tablespoon Flour

1 onion diced

2 garlic cloves minced

1 large orange (you will need the rinds and juice)

1 large Apple cut into chunks

1 liter Vegetable stock

1 Cup milk

½ Cup cream (optional)

1 Chilli

1 tablespoon curry powder

½ teaspoon dried coriander

Salt and Black Pepper to taste

Method

1. Pre-heat oven to 180 degrees

2. In a large oven tray, lightly drizzle Butternut chunks with olive oil and sprinkle some salt and black pepper and roast for 45 minutes. Remove from oven and let cool.

3. Drizzle olive oil in a separate pot, lightly fry onion until translucent. Add minced garlic and stir. Add orange rind, flour, curry powder, coriander, and chili powder while stirring.

4. Add the roast butternut into your tock mixture.

5. Pour in the vegetable stock, milk, cream, orange juice and grated apple. Boil for 2 minutes and allow to simmer on a medium to low heat for 20 minutes.

6. Blend to your required consistency.

7. Season to taste
