Nthabi’s Chicken Tacos

Anyone that knows me knows that I love Mexican Food. From Burritos to Enchiladas and Quesadillas, I love it all. But nothing beats a quick 20 minute no frills Tacos. Made with homemade wraps these full proof tacos is a for sure hit with both kids and adults. The wraps are so easy to make and taste much better than the shop bought stuff. Once you’ve tried them you’ll never buy wraps again.


For the wraps:

Ingredients:

2 cups flour

1 tsp salt

1 tsp sugar

2 tablespoons olive oil

2 tablespoons warn water

Method

Sift flour, salt and sugar, mix well. Add oil and water. Mix till dough is firm, form a ball (use a little more water if necessary). With a knife, divide your ball into half then divide into four quarters to get 12 small balls.

On a floured surface, gently roll out the balls (one at a time) into call circles, use a saucer to cut exact shapes if you wish.

Heat a non-stick pan, when hot, place your first wrap into the pan for about 1 minute per side or until they reach your desired doneness.

The filling:

Ingredients

- 4 Chicken Breasts cut into strips

- 1 tbsp tomato puree

- 1 lemon juiced and cut into wedges for later

- Lettuce

- 400g grated cheese (I used a mix of cheddar and mozzarella)

- 1 bunch coriander


Method

- Cut chicken patties into strips and place in microwave for two minutes

- Season with salt, black pepper and cumin.


Sides

Pineapple Salsa (made with tomato, onion, pineapple and chilli)

Assemble as you wish, top off with a dash of plain yoghurt and serve 3 per person.

Other variations:

- Chicken strips, fingers or burger patties (cut into strips) and microwaved for 4 minutes.

- Fish (great with fish fingers too)

- Beef
